Jack-O-Lantern Goetta Stuffed Peppers

1 LB Glier’s Hot Goetta

6 Bell Peppers

1 White Onion

3 Cloves Garlic

1 Can of Crushed Tomatoes

1 Cup of Cooked Rice

2 Tbsp Italian Seasoning

2 Cups Italian Cheese Blend or Mozzarella

Salt and Pepper to taste

Preheat oven to 350 degrees. Brown the Goetta in a pan over medium-high heat, set aside on a paper towel-lined plate. Cook rice according to the instruction on the packaging. Set the cooked rice aside in a large bowl.

Cut the top off of the peppers, set-tops aside. Remove the seeds and membrane from the peppers. Cut the shape of the Jack-O-Lantern that you want for each pepper.

Dice the useable flesh from the tops of the peppers. Dice the onion and mince the garlic. Cook the diced onion and peppers in a pan over medium heat with oil or butter. Add the garlic once the onions start to caramelize. Cook for an additional minute, then add the cooked vegetables into the bowl with the rice. Add the Goetta, tomatoes, 1 cup of cheese, and the Italian seasoning to the bowl and stir thoroughly. Add salt and pepper to taste. Place the peppers into the cooking dish, drizzle with oil and sprinkle with salt and pepper. Spoon the mixture into the peppers. Cover the stuffed peppers with the remaining cheese. Pour ½ of water into the bottom of the dish then cover with foil. Bake for 35 minutes, then remove the foil. Cook for another 15 minutes. If the cheese has not browned you can turn the broiler on for 2-3 minutes. Remove from the oven and serve.

Jack-O-Lantern Goetta Quesadillas

(For 2 Quesadillas)

1 Roll Glier's Goetta

4 Large Flour Tortillas

2 Cups Shredded Cheddar Cheese

2 Tbsp Olive Oil

Optional: Sour Cream, Hot Sauce, Salsa, Guacamole

Time to get spooky! These tasty treats are perfect this time of year. Have the kids join in to make their own Jack-O-Lantern faces on their tasty goetta quesadillas!

Pre-heat oven to 425 degrees Fahrenheit. Start by frying up your goetta into crispy crumbles in a pan. Once fully cooked and crispy, transfer to a bowl. Cut out a face on one large flour tortilla. Lay another tortilla down on a greased baking sheet and layer your goetta on top. Add shredded cheddar cheese over the goetta and lay the tortilla with a face on top. Paint olive oil on top of the face to avoid burning and help the top layer get crispy.

Bake each quesadilla in the oven for 12-15 minutes or until crispy.
